Tuscan Chicken Sandwich 🥪This is my quick and simple version of Tuscan Chicken. It’s a versatile dish that can be served as a sandwich or over egg noodles, rice or pasta. I personally love to dip crusty bread into the creamy sauce. My one regret - the single row of pancetta. Should’ve added more 😕Enjoy 💛

Sun-Dried Tomato Spread

ingredients

  • 4 ounces sun-dried tomato
  • 1 cup basil
  • 1 cup parsley
  • 2 garlic cloves
  • Salt
  • Black pepper
  • 1/4 cup olive oil
  • 1/2 cup parmesan, grated

Creamy Tuscan Chicken

ingredients

  • 2 boneless skinless chicken breast, sliced in half lengthwise
  • 1/3 cup all-purpose flour
  • 1 teaspoon oregano
  • 4 tablespoons unsalted butter
  • 1/2 cup chopped onion
  • 1 tablespoon minced garlic cloves
  • 1/4 cup sun-dried tomatoes packed in oil, thinly sliced
  • 1 1/2 cups heavy cream
  • 1 1/2 cups parmesan cheese
  • 2 cups baby spinach leaves
  • Salt
  • Pepper
  • Crispy pancetta, for serving

For the Spread

Method

  • Step 1

    Add all the ingredients except Parmesan into a processor and blend.

  • Step 2

    Add the parmesan and blend again, until you have a smooth consistency.

  • Step 3

    Store the spread in the fridge.

For the Chicken

  • Step 1

    Season chicken with salt + pepper. Dredge each chicken in flour and shake off any excess flour.

  • Step 2

    In a large skillet over med high heat, melt the (2.5 tbsp) butter. Add the chicken and sear for 3 min on each side. Then transfer to a plate and set aside.

  • Step 3

    In the same skillet over med heat, melt the rest of the butter. Then add garlic, onions and sun dried tomatoes and saute until onions become translucent. Then add baby spinach and stir for 1 min. Finally, add the cream and lower the heat. Simmer for about 2 min until the cream is slightly thickened.

  • Step 4

    Turn the heat off and stir in the parmesan. Then add the chicken back into the pan.
