ingredients
- 1/3 cup quinoa, cooked according to package directions
- 1/3 cup brown rice, cooked according to package directions
- 1 cup grated carrots
- 1 beet, peeled and sliced
- 1 cucumber, sliced
- 4 handfuls baby spinach
- 1/2 (14 ounce) block tofu, cubed
- Olive oil
- Lime juice
- Salt
- Black pepper
Method
Step 1
Mix quinoa and rice in a bowl.
Step 2
Put your baby spinach in your bowl, then add the rice/quinoa mixture, remaining vegetables and tofu. Top with fresh herbs, lime juice, olive oil, salt and pepper to taste.
