ingredients

  • 1/3 cup quinoa, cooked according to package directions
  • 1/3 cup brown rice, cooked according to package directions
  • 1 cup grated carrots
  • 1 beet, peeled and sliced
  • 1 cucumber, sliced
  • 4 handfuls baby spinach
  • 1/2 (14 ounce) block tofu, cubed
  • Olive oil
  • Lime juice
  • Salt
  • Black pepper

Method

  • Step 1

    Mix quinoa and rice in a bowl.

  • Step 2

    Put your baby spinach in your bowl, then add the rice/quinoa mixture, remaining vegetables and tofu. Top with fresh herbs, lime juice, olive oil, salt and pepper to taste.
