- 1 3/4 cups old fashioned oats
- 1 1/2 tablespoons chia seeds
- 4 tablespoons honey
- 1/2 cup plain Greek yogurt
- 2 cups almond milk
- Zest from 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract

- 1 cup blueberries
- Zest from 1 lemon
Method
Make the blueberry compote:
Step 1
In a small saucepan, add 1 cup of the blueberries, honey, lemon juice, vanilla extract, and a pinch of salt.
Step 2
Heat over medium until bubbling, then reduce to medium-low and simmer for 10 minutes.
Step 3
Stir in the remaining cup of blueberries and cook for another 8 minutes. Transfer to a bowl to cool completely.
Prepare the lemon oats:
Step 1
In a large bowl, combine oats, chia seeds, honey, Greek yogurt, almond milk, lemon zest, lemon juice, and vanilla. Stir until well mixed.
Assemble the jars:

Evenly divide the cooled blueberry compote between 4 jars or glasses. Top with the lemon overnight oats mixture. Cover and refrigerate overnight.
