This easy appetizer is perfect for summer entertaining. This yogurt dip is delicious with potato chips or fresh bread.

ingredients
- 2 cups full fat greek yogurt
- 1 lemon, juiced and zested
- 1/3 cup extra virgin olive oil
- 1/3 cup scallions
- 1 teaspoon red chili flakes
- Chips or bread to serve
- Salt and pepper to taste
Method
Step 1
Mix together the lemon juice, a pinch of salt and Greek yogurt. Spread in a large shallow bowl and set aside.
Step 2
Heat a pan over medium low heat. Add olive oil and red chili flakes. Let it simmer for about 5 minutes, being careful the chili flakes don’t burn. Add in the scallions and let them sizzle until crispy, about 3 minutes.
Step 3
Pour over the yogurt and top with lemon zest, salt & pepper. Serve with bread, chips or veggies.
