ingredients
- 1/2 cup rice flour
- 1/2 cup plus 1 tablespoon chestnut flour
- 1/3 cup oat flour
- 1/4 cup coconut sugar
- Kosher Salt
- 2 eggs, or flax eggs
- 1 1/3 cups plus 1 tablespoon almond milk
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
Method
Step 1
In a large bowl, place the flour blend, sugar, salt, and combine. In a medium bowl, whisk eggs with almond milk, coconut oil, and vanilla.
Step 2
Create a hole in the center of the dry ingredients and add 1/3 of the liquid mixture. Mix well until there is no clump anymore. Add the rest of the liquid and whisk again. Let the batter sit for 1 hour (optional).
Step 3
Cook crepes for about 1-2 minutes over medium heat until golden brown on both sides. Serve with your favorite fillings and enjoy!
