This lovely recipe inspired by @abritinhelsinki! Slice purple cabbage and butternut squash into half moons, leaving the peel on for more fiber & less work. Toss with avo oil + sprinkle with salt & pepper. Roast at 400F for 25-30min. Can add chickpeas to the pan to make it a complete meal as well! Top with toasted pumpkin seeds, pomegranate jewels + cilantro + a drizzle of zesty lemon-maple-miso dressing (recipe below!).

1 Tbs chickpea miso
1 Tbs dijon mustard
1 Tbs lemon juice
1 Tbs maple syrup
