- 1 cup steel-cut oats
- 3 cups EPIC Homestyle Savory Chicken Bone Broth
- 1 tablespoon miso
- 1 teaspoon EPIC Beef Tallow
- 1/2 cup sautéed mushrooms
- 1 cup sautéed spinach
- 1 soft-boiled egg
- for topping Green onions
- to taste Kosher salt
- to taste Freshly ground black pepper
Method
Step 1
In a pot, bring the bone broth to a gentle boil. Stir in steel-cut oats and reduce heat to low. Mix in miso until fully incorporated. Simmer for 20-25 minutes, stirring occasionally, until the oats are tender and creamy.
Step 2
While the oats cook, heat beef tallow in a separate pan over medium heat. Add mushrooms and spinach, sautéing until softened. Season with salt and pepper to taste.
Step 3
Bring a pot of water to a boil. Carefully add the egg and cook for 6 1/2 minutes. Immediately transfer the egg to an ice bath and let cool for a few minutes before peeling.
Step 4
Divide the cooked oats between two bowls. Top each with sautéed mushrooms, spinach, and the soft-boiled egg cut in half. Garnish with green onions and season with additional salt and pepper if desired. Serve warm and enjoy!
