"This time of year in the PNW we have a very unique weather phenomenon known as subreaks. I’ve never heard of this anywhere else and it seems to only exist in PNW Meteorologist vernacular. A sunbreak is a little peek of sunlight shining through a slight crack in the ominous, ever present dark cloud cover. Basically what gives us hope for warmer weather to return to Oregon after the long, dreary winter. 🌦 This Citrus & Salami Salad is like my own personal sunbreak this time of year. It showers me with just enough sunny citrus to push me through to spring. I’ve been making this for lunch multiple times a week lately and it’s really giving me hope of sunnier days ahead. A lot of salads don’t sustain me longer than an hour or two. But this baby has got enough oomph in ingredients to actually make me feel full. It’s got a fresh & crunchy, sunny, zesty sweetness with a satisfyingly salty balance of briny flavors."
