Especially because we can make treats like this No Bake Chocolate Raspberry Tart so tasty and soooo easy. It's super creamy and the tart raspberries are perfect. this one is a perfect last minute treat for momma's day too!

Still can't get over these Strawberry Shortcake Bars, they're bites of pure HEAVEN, I tell you! The vanilla bean filling is soooo lusciously creamy and they really taste just like strawberry shortcake! The perfect use for the amazingly sweet strawberries that are coming into season right now. the San Diego farmers markets have been full of the best first of the season strawberries - are you finding them around you too?! I love it swirled into yogurt too. So scrumptious, and it's super quick and easy to make. Chia seeds are the only thickener it needs! I got the most DELICIOUS sweet spring strawberries at the farmers market this past Sunday and they're making me so excited for all the strawberry treats to come a bunch of them went into a strawberry rhubarb pie I'm testing (not quite right yet - but so delicious, see my stories!) and the rest got eaten plain ? if you've got some sweet strawberries of your own, I'm putting in a request that you make these Chocolate Covered Strawberry Brownies they're little bites of heaven, if I do say so myself. Fudgy, fresh, and irresistible.

I've had a looooong night of travel flying from San Diego to Newark to St. Thomas. just landed in paradise, and we're now in route to the ferry where we'll go to board our catamaran for the week to float around the islands. i'm SO EXCITED! I do wish I had remembered to grab my bag of these Coconut Flour Chocolate Chunk Cookies that was stocked in my freezer before I left though. I'm loaded up with snacks...but these cookies, they are TOO GOOD. If you've got no Saturday baking plans, these are a good one to add to the list they're Paleo, vegan + nut-free too

You guys, I have been going NUTS looking for rhubarb at every farmers market + regular market I've been too lately, and I can't find it ANYWHERE. It's making me seriously miss the massive piles of it at the farmers market in Seattle. Where's a girl supposed to get some rhubarb in Southern California?!? I've been dyyying to whip up another batch of these irresistible Raspberry Rhubarb Bars that I made last year - they have an amazing frangipane topping that the fruit just melts into. It's so heavenly (and Paleo!). If you've got rhubarb in your parts, you've got to make this one to virtually share with me and I might make a batch with strawberries and raspberries until I can find some rhubarb of my own. ALSO, if you know somewhere in San Diego that has rhubarb, plz let me know .

I'm legitimately sad this No-Bake Layered Blueberry Cheesecake isn't in my freezer anymore! this stunner is a cashew-based raw, vegan, + paleo cheesecake, with a date pecan crust. it's suuuuper creamy and that top layer of lemony blended blueberries is the perfect tart finish! Just remembering this cheesecake makes me wanna make MORE in every flavor - who else wants me to? You should definitely work this one into your weekend plans.
