ingredients
- 4 servings of your favorite pasta
- 10 ounce package baby bella mushrooms
- 1 cup freshly grated Pecorino Romano or Parmesan cheese
- 1 cup heavy cream
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 3 cloves of garlic, finely chopped
- Salt, to taste
- Pepper, to taste
Method
Step 1
Bring a pot of water to boil. Cook 4 servings of your favorite pasta. Save 1/4 cup of water for later.
Step 2
Wash and slice mushrooms into quarter inch slices. In a skillet, add the olive oil, butter and sliced mushrooms. Cook on medium-high heat until caramelized. Once mushrooms are golden brown, add the fresh garlic and cook for an additional few minutes.
Step 3
Add the heavy cream, cheese, salt and pepper into the same skillet with the mushrooms. Stir with a wooden spoon until the cheese is melted.
Step 4
Remove the skillet from the heat. Add the cooked pasta and pasta water and mix together. Top with more cheese. Serve immediately.
