Egg White Omelette and Toast Two Ways

  • 2 slices bread
  • 1 avocado, mashed
  • everything bagel seasoning, to top
  • 1-2 tablespoons cashew butter
  • 1 banana, sliced
  • cinnamon, to top
  • 1 whole egg
  • 2 egg whites
  • 1 handfull spinach (optional)
  • oil or butter, for cooking


  • Step 1

    In a small bowl, whisk eggs. In a medium skillet, heat a bit of oil or butter. Add spinach to pan and sauté until wilted.

  • Step 2

    Add eggs to pan and cook until the bottom has set (about a minute). Flip and allow the other side to finish cooking. Fold in half and transfer to a plate.

  • Step 3

    Toast bread and spread one slice with cashew butter and one with mashed avocado. Top with everything bagel seasoning and banana and cinnamon as desired.
