1 cup ricotta, 1 cup mascarpone and 1/2 cup parmesan is my go-to filling. It completely melts in your mouth.

Weekends are the perfect time to tackle a dinner that takes a bit more time. All-purpose flour, semolina flour, eggs, whole milk and extra virgin olive oil are coaxed into a smooth, pliable dough. It’s then rolled thin and cut into delicate rounds that hold ricotta, mascarpone and Parmesan. Beautiful wine is mandatory before, during and after this meal.
