For the Pasta and Seafood

ingredients

  • 1 pound clams, rinsed in cold water
  • 1/2 pound cooked octopus
  • 1/2 pound black pasta
  • 2 1/2 ounces samphire
  • 1 shallot, finely chopped
  • 1 tablespoon parsley, chopped
  • 2 tablespoons white wine
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • chilli flakes, for garnish

For the Creamy Garlic Sauce

ingredients

  • 8 garlic cloves, finely chopped
  • 1 shallot, finely chopped
  • 1 tablespoon thyme leaves
  • 1 tablespoon oregano, chopped
  • 3/4 cup vegetable broth
  • 2 tablespoons white wine
  • 3 tablespoons soft cheese spread
  • 3 tablespoon olive oil
  • sea salt and black pepper, as needed

Method

  • Step 1

    Bring a large pot of salted water to a boil. Boil the pasta until al dente, drain.

  • Step 2

    Heat olive oil in a large skillet on medium heat, cook garlic and shallots until soft, about 3 minutes. Add thyme and oregano, stir and pour in wine, boil for 3 minutes.

  • Step 3

    Add broth, season with salt and pepper, cook for 5 minutes. Add cheese spread, stir and cook over low heat until the sauce thickens, about 3 minutes.

  • Step 4

    Heat olive oil in a large skillet, cook the shallot until soft, about 2 minutes. Add the octopus, fry until golden brown, 5-6 minutes. Add clams and parsley. Pour white wine and cook for 3 minutes. If any clams do not open after 5 minutes, discard them.

  • Step 5

    Add samphire and butter. Boil for another minute, stirring constantly. Season with pepper. Add the pasta to the garlic sauce, sprinkle with chili flakes. Enjoy!
