Parmigiano Reggiano PDO is a fine cheese known and appreciated throughout the world. It is produced in the provinces of Parma, Reggio Emilia, Modena and parts of those of Mantua and Bologna. Produced with raw cows’ milk, it is a semi-fat cheese with a hard, finely granular texture, white or pale yellow in color with a natural pale yellow rind. ingredients
- 1 small baguette, sliced lengthwise
- 4 tablespoons unsalted butter, at room temperature
- 1/2 cup plus more for topping as desired grated Parmigiano Reggiano PDO
- 1 head roasted garlic
- 1 tablespoon parsley, chopped
- 1 teaspoon red pepper flakes
- Kosher salt
Method
Step 1
Preheat oven to 400°F.
Step 2
In a bowl combine butter, Parmigiano Reggiano PDO, roasted garlic, parsley, red pepper flakes and kosher salt. Use a fork to mash the soft garlic cloves into the butter mixture.
Step 3
Spread butter onto sliced baguette halves, grate additional parmesan if desired, and bake for 10-15 minutes until golden brown.
Step 4
Remove from the oven and allow to cool slightly and slice.
Step 5
Garnish with additional Parmigiano Reggiano PDO, parsley, and/or balsamic glaze. Serve warm.
