- 2 1/2 cups all purpose flour
- 1 teaspoon kosher salt
- 1 cup hot water
- 1/2 teaspoon baking powder
- 1/3 cup lard, oil or butter
Method
Step 1
In a large mixing bowl, combine the all-purpose flour, salt, and baking powder.

Cut the lard (or oil or butter) into the dry ingredients while stirring continuously until the mixture resembles coarse crumbs.

Slowly add the hot water little by little, stirring continuously until a dough begins to form. If the dough is sticky, it's not ready yet and needs to be kneaded further.

Once the dough is smooth and elastic, divide it into 8-10 sections on a floured surface.

Flatten each section with your palms to form small disks.

Allow the dough to rest for 30-40 minutes, covered, to relax the gluten.

After resting, roll out each portion into thin, round tortillas on a floured surface.

Heat a griddle or skillet over medium-high heat.

Place a rolled-out tortilla onto the hot griddle or skillet and cook until bubbles begin to form on the surface, usually about 30 seconds to 1 minute.

Flip the tortilla and cook the other side until light brown spots appear.
