ingredients
- 4-6 large wholemeal wraps/tortillas
- 1 red onion, finely diced
- 4 cloves of garlic, crushed
- 1 spring onion, finely sliced
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon oregano
- 2 tomatoes, diced
- 1 can black beans, drained and rinsed
- 1 cup frozen peas, defrosted
- 1 cup frozen sweet corn, defrosted
- 1 red capsicum, diced
- 1 jalapeño, diced
- 250 grams vegan cheese, grated
- Oil for cooking
- 1 avocado, sliced
ingredients
Avocado Crema
- 1 large avocado
- 1/2 cup dairy-free Greek yogurt
- 1 lemon, juiced
- A handful fresh coriander, roughly chopped
Method
Step 1
Heat up an oil pan and add one tortilla. Add all ingredients and top with the other tortilla. Allow it to heat up for 2-3 minutes on both side or until vegan cheese is melted. Take off of heat and plate.
Step 2
In a blender, add all the avocado crema ingredients and blend until smooth. Serve with quesadillas.
