How to make Tomato Confit Toast with Burrata

  • 2 cups cherry tomatoes
  • 10 garlic cloves, peeled
  • 10 sprigs fresh thyme
  • 2 cups extra virgin olive oil
  • 1 teaspoon kosher salt
  • Sliced sourdough bread, toasted
  • Burrata cheese, for serving
  • Optional: balsamic vinegar and fresh basil


  • Step 1

    Preheat oven to 250 degrees F. Place the tomatoes, garlic cloves, and thyme sprigs in a large baking dish. Pour olive oil in, until all the ingredients are covered. Add in salt.

  • Step 2

    Bake for about 2 hours, until tomatoes and garlic are meltingly tender.

  • Step 3

    On pieces of toasted sourdough bread, arrange pieces of cooked garlic and tomatoes. Top with a large piece of burrata cheese. Optional: drizzle balsamic glaze on top and garnish with fresh basil. Enjoy!
