While tomato season is still in swing, turn the gorgeous summer bounty into some delicious and tender tomato confit! This dish comes together so easily and is remarkably delicious. For good measure, we're adding garlic into the confit mixture.
Serve the luscious garlic & tomato confit on top of toast with burrata for an indulgent pizza-like toast situation!

ingredients
- 2 cups cherry tomatoes
- 10 garlic cloves, peeled
- 10 sprigs fresh thyme
- 2 cups extra virgin olive oil
- 1 teaspoon kosher salt
- Sliced sourdough bread, toasted
- Burrata cheese, for serving
- Optional: balsamic vinegar and fresh basil
Method
Step 1
Preheat oven to 250 degrees F. Place the tomatoes, garlic cloves, and thyme sprigs in a large baking dish. Pour olive oil in, until all the ingredients are covered. Add in salt.
Step 2
Bake for about 2 hours, until tomatoes and garlic are meltingly tender.
Step 3
On pieces of toasted sourdough bread, arrange pieces of cooked garlic and tomatoes. Top with a large piece of burrata cheese. Optional: drizzle balsamic glaze on top and garnish with fresh basil. Enjoy!
