The Tunacado sandwich from popular health food chain Joe & The Juice has become a viral sensation on the internet, and for good reason! The delicious, flavorful combination of pesto, whipped tuna, and avocado is absolute perfection. I cracked the code on how to make this stunning sandwich at home! I used sourdough bread for my sandwich, but feel free to use flatbread or whatever bread is your favorite (the official Joe & The Juice version uses their special flatbread).

ingredients
- 2 cups fresh basil leaves
- 2 garlic cloves
- 1/4 cup grated parmesan cheese
- 1 teaspoon Kosher salt, divided
- Juice of ½ lemon
- 1/4 cup pine nuts, toasted
- 1/4 cup extra virgin olive oil
- 1 can tuna in oil
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill
- 2 large pieces sourdough bread or flatbread
- 1/2 beefsteak tomato, sliced
- 1 tablespoon dijon mustard
- 5 cornichon pickles, chopped
- 1/2 avocado, sliced
Method
Step 1
In a food processor, add basil, garlic, parmesan, ½ teaspoon salt, and lemon juice. Pulse to combine, then add in the nuts and pulse until blended. Drizzle in olive oil and blend until smooth. Set aside. Extra pesto can be stored in the fridge for up to a week or in the freezer for 6 months.
Step 2
Also in the food processor, add in tuna with oil, mayonnaise, ½ teaspoon salt, and dill. Combine until very smooth and mousse-like. Set aside.
Step 3
Build the sandwich. On one piece of bread, spread a hearty layer of pesto. Top with tomato slices and a pinch of kosher salt. On the other piece of bread, spread mustard. Top with the tuna mixture, and spread. Sprinkle on chopped pickles and lay out avocado slices. Close the sandwich and enjoy!
