Matzo Brei is a breakfast staple during Passover, when those who observe don't eat leavened bread. A Jewish food, Matzo Brei is basically an egg scramble with matzo added in! You can turn this scramble into anything you want - here, I have two ways to make it: sweet and savory. You can get as creative as you want with the toppings! For savory, I went with cheese, tomato, avocado, chives, and hot sauce. For sweet, I added maple syrup, strawberries, bananas, and powdered sugar. You can't go wrong!

ingredients

  • 2 pieces matzo
  • 4 eggs
  • 1 tablespoon milk
  • 3 tablespoons butter
  • Kosher salt, to taste
  • freshly cracked black pepper, to taste
  • 2 ounces sharp cheddar cheese, grated
  • 1 small tomato, diced
  • 1 avocado, sliced
  • 1 teaspoon finely chopped chives
  • 2 tablespoons maple syrup
  • 5 strawberries, sliced
  • 1/2 banana, sliced
  • 1 tablespoon powdered sugar

Method

  • Step 1

    Start by getting the matzo pieces soggy. Rinse them under the sink faucet and set aside.

  • Step 2

    Mix the eggs and milk together. Set aside.

  • Step 3

    In a large pan over medium heat, melt the butter. Break the soggy matzo into small pieces and add to the pan. Saute until golden brown.

  • Step 4

    Add the egg mixture and cook the eggs and matzo together like scrambled eggs. Once cooked into a soft scramble, remove from the heat and divide among two plates.

  • Step 5

    For the savory serving, top the eggs & matzo mixture with salt and pepper to taste. Then add cheese, diced tomato, sliced avocado, and chives. Serve with hot sauce if you like!

  • Step 6

    For the sweet serving, top with maple syrup, strawberries, bananas, and powdered sugar. Enjoy!
