ingredients
- 1 cup unsweetened coconut milk
- 2 cups jasmine rice
- 2 tablespoons coconut cream
- 1 teaspoon vanilla extract
- 1 teaspoon agave nectar
- 8 rice paper wrappers
- Fresh mango slices
- Fresh berries
- 1/2 cup soy yogurt
- 1/4 cup raspberries
- 1 teaspoon agave nectar
- juice of one lime
Method
Step 1
Cook rice according to package directions in coconut rice milk. Add coconut cream, vanilla and agave.
Step 2
Put the rice papers in some cold water. Then when the papers are elastic/soft (about 30 seconds) take them out of the water and put some coconut rice on it, mango slices and berries and make the rolls.
Step 3
For the Dip: Blend raspberries with soy yogurt, agave and lime juice. Serve rolls immediately.
