These No-bake bars are made with a chocolate flax seed, coconut and oat base and is topped with a creamy sweet potato filling. The filling is a mixture of sweet potato, coconut cream, maple syrup, and cacao powder. This sweet treat is vegan and gluten-free.

Base
ingredients
- 2/3 cups gluten-free rolled oats
- 1/3 cup flaxseed meal
- 5 tablespoons desiccated coconut
- 1/4 cup sunflower seeds
- 1 tablespoon raw cacao powder
- 1 tablespoon raw cacao nib
- 2 tablespoons maple syrup, add more if you wish
- 3 tablespoons melted coconut oil
Sweet potato Chocolate Filling
ingredients
- 1 small sized sweet potato
- 1 cup coconut cream
- 1/3 cup extra virgin coconut oil, melted
- 7 tablespoons raw cacao powder
- 7 tablespoons maple syrup or rice malt
- 1/4 teaspoon salt
Method
Step 1
Line a tin with parchment paper. In a food processor place every dry ingredient for the crust and process until well processed. Add wet ingredients and process until it becomes like wet sand. Add more coconut oil if your mixture is too dry.
Step 2
Press the crust into the bottom of the mold.
Step 3
In a high speed blender place every ingredient for the chocolate layer and blend well until smooth. Add more sweetener if you need. Layer the filling above the base. Cool it in the freezer until set.
Step 4
Take out from the mold and let it thaw at room temperature or keep in the fridge until it becomes soft enough to cut. Cut with a warm knife.
