- 1 (3.4 ounce) package instant vanilla pudding mix
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 3 egg whites
- 1 cup milk
- 1 cup sour cream
ingredients
For the Whipped Cream Cheese Layer:
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of fine sea salt
ingredients
For the Topping:
- 8 ounces Cool Whip (or whipped topping of choice)
- 1 1/2 cups Cascadian Farm Organic Frozen Strawberries, thawed and sliced
- 1 1/2 cups Cascadian Farm Organic Frozen Blueberries, thawed
Method
Step 1
Preheat the oven to 350°F. Lightly spray a 15x10-inch sheet pan with nonstick spray.
Step 2
Make the cake batter: In a large mixing bowl, combine cake mix, instant pudding mix, oil, vanilla, egg whites, milk, and sour cream. Beat until the batter is smooth and fluffy, about 2–3 minutes.
Step 3
Pour the batter into the prepared pan and spread evenly. Bake for 12–15 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
Step 4
Prepare the cream cheese layer: In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla, and salt until smooth and creamy.
Step 5
Spread evenly over the cooled cake. Chill in the fridge for 10 minutes to help it set.
Step 6
Spread Cool Whip evenly over the cream cheese layer.
Step 7
Place the cake back in the fridge for 20 minutes to chill and firm up.
Step 8
Top with the sliced Cascadian Farm Organic Strawberries and blueberries.
Step 9
Slice into bars and serve immediately or store in the fridge until ready to serve.
