Roasted Carrot And Radish Bowl With Soft Boiled Egg And Avocado
"Spent the past hour prepping food for the rest of the week now I'm enjoying the fruit of my labor with this nourishing bowl. Spinach topped with roasted carrots + radishes with avocado oil and @primalpalate adobo seasoning (obsessed with this stuff!) + avocado with dulse flakes + soft boiled egg + microgreens."

Ingredients:

2-3 carrots

4-5 radishes, cut in half or quarters depending on size

1/2 avocado

handful of spinach

microgreens

soft boiled egg

avocado oil

salt and pepper to taste

Directions:

Preheat oven to 400F. 

Toss the carrots and radishes in avocado oil, salt and pepper. Roast for 45 minutes.

Assemble bowl with spinach on the bottom, then roasted vegetables, avocado, egg and microgreens.
