Pink Pearl Apple Galette

"If it doesn’t feel like fall, at least it can smell like it! This one is made with pink pearl apples, but any good baking apple will do. It has minimal ingredients and is both dairy & refined sugar free with a gluten-free option! Have you baked with these apples before? I have a few more to use up and am trying to think of the perfect recipe...maybe a French apple cake or mini tarts? "
