  • 1 tablespoons pumpkin pie spice
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 3 tablespoons coconut oil, melted
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon vanilla extract

  • 1/2 cup powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon almond milk

Method

  • Step 1

    In a bowl, combine pumpkin puree, eggs, coconut sugar, melted coconut oil, vanilla extract, and orange juice.

  • Step 2

    In a separate bowl, sift together the remaining dry ingredients: all-purpose flour, pumpkin pie spice, cinnamon, baking soda, and baking powder. Then, add these dry ingredients to the wet mixture and stir until well combined.

  • Step 3

    Spoon the muffin batter into lined muffin tins; this recipe should make approximately 12 muffins.

  • Step 4

    In another bowl, combine the crumb topping ingredients: melted coconut oil, sugar, cinnamon, all-purpose flour, and vanilla extract. Spoon this crumb mixture over the top of each muffin.
