Roasted Beet Hummus
cleaning out my fridge + cleaning up my act after an indulgent holiday week.... I had some leftover beets that I roasted with some garlic and then used then to make this beet hummus -@whatscookingoodlooking_

Add ingredients directly to your favorite online grocery cart (where available).


  • 3 beets
  • 3 cloves garlic
  • 1/3 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • Salt and black pepper
  • Cucumber, sliced


  • Step 1

    Preheat oven to 400ºF. Wrap the beets and garlic in foil and roast until soft enough to pierce with a fork, about 30 minutes. Remove and let cool before peeling.

  • Step 2

    Add all ingredients to a food processor and blend until smooth. Serve with cucumber slices.
