ingredients

  • 1 can pumpkin puree (or 1 cooked sweet potato)
  • 2 ripe bananas
  • 2 large eggs
  • 2 cups gluten-free rolled oats
  • 1 teaspoon baking soda
  • Pinch of sea salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup pure maple syrup (or raw honey)
  • 1/2 cup dark chocolate chips, plus more for topping

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a blender or food processor, combine all of the ingredients except the chocolate chips.

  • Step 3

    Fold in the chocolate chips.

  • Step 4

    Pour the mixture into a loaf pan lined with parchment paper. Top with additional chocolate chips.

  • Step 5

    Bake for about 30 minutes or until a toothpick comes out clean.

  • Step 6

    Allow the loaf to cool for about 20 minutes. Remove from the pan, slice, and enjoy!
