"Sweets for my Sweeties!? I hope you all don't mind another kiwi cake!? Since the last one turned out pretty good, I wanted see how the kiwi would pair with chocolate. Duh, I should have known that chocolate goes with Everything!? The hubbs enjoyed it, so I hope you will as well.? This is a 6 ingredient Chocolate Kiwi Cake. Here is the recipe:
Crust
1 2/3 cup gluten free oat flour
2/3 cup pitted juicy dates
2/3 cup dried mulberries
Filling
1 cup cocoa powder
3/4 cup maple syrup
1/3 cup coconut oil
Topping
2-3 Kiwi
1. Blend all crust ingredients in a food processor until you get a thick and crumbly consistency.
2. Place into your 9 inch spring form pan, making sure to add more around the edges to create raised sides.
3. Place your pan into the freezer for around 30 minutes to an hour.
4. Whisk together your cocoa powder, maple syrup, and coconut oil in a bowl.
5. Take your pans out of the freezer. Pour your filling into your crust. Garnish with a layer of kiwi slices.
