Strawberry and Basil Streusel Bar

"I know that basil and strawberry might not be everyone cup of tea, but I love it. I first came across this combo in a daiquiri form, and since then I use it now and then when I’m baking. The fresh herb of basil helps cutting down the sweetness of the jam, that’s why it is so genius."

Recipe Card

For the Base

ingredients

  • 1 cup all purpose flour
  • 1/2 cup margarine
  • 1/4 cup cane sugar
  • pintch of salt

For the Filling

ingredients

  • 2 cups fresh strawberries
  • 7 ounces strawberry jam
  • Basil, small bunch

For the Crumble top

ingredients

  • 1 cup all purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup cane sugar
  • 1/2 cup margarine
  • 1 juice and zest lime

Method

  • Step 1

    To make the base, combine all the ingredients. Roll the dough out between to baking paper and place to the bottom of a baking tray. (leaving one paper on) Chill in the fridge for an hour.

  • Step 2

    Preheat the oven for 340 degree F. Prick the dough with a fork then bake for 15 minutes. Remove from the oven cool down a bit.

  • Step 3

    Wash the strawberries and cut into quarters. Spread the jam over the crusty base. Lay the fruits on top. Sprinkle with chopped basil leaves.

  • Step 4

    Mix all the ingredients for the crumble top and scatter over the berries. Bake for 40 minutes on 350 degree F.
