These chewy chocolate chip banana walnut cookies hit the spot without being overly indulgent. They're perfect as a snack, breakfast or dessert!

Serves or Makes: 9


  • 2 medium ripe bananas, mashed
  • 1/ 3 cup unsweetened vanilla almond milk
  • 1/ 4 cup creamy almond butter
  • 2 tablespoons hot coffee
  • 1 tablespoon olive oil
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1/ 2 cup chocolate chips
  • 1 cup walnuts, chopped


  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a large mixing bowl, combine the bananas, almond milk, almond butter, coffee and olive oil.

  • Step 3

    In a medium mixing bowl, mix the rest of the ingredients together. Then fold the dry ingredients into the wet and mix to combine.

  • Step 4

    Using a large tablespoon, spoon 9 cookies onto a baking tray. Bake until golden brown, about 25 minutes. Enjoy!
