ingredients
- Olive oil
- 2 tablespoons butter
- 3 garlic cloves minced
- 8 ounces mushrooms sliced
- 4 cups kale
- Salt
- Black pepper
- Dash of chili flakes
- 2 cups shredded Mexican cheese
- 8 tortillas
Method
Step 1
Sautee the mushrooms and kale in olive oil, butter and garlic. Assemble the quesadillas but arranging the tortillas in a sheet pan, overlapping each. Add the mushroom and kale mixture to the center and top with cheese. Fold over the ends of the tortillas and top with more until covered.
Step 2
Preheat oven to 400. Add a sheet pan and pan on top and bake for 20 minutes.
