Simple Restaurant Style Salsa

ingredients

  • 1 (14.5 oz can) Muir Glen Diced Tomatoes
  • 2 tablespoons onion, diced
  • 1 garlic clove, minced
  • 1/4 teaspoon cumin
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon granulated sugar
  • 1 tablespoon lime juice

Quesadillas

ingredients

  • 2 flour tortillas
  • 1/4 cup diced tomatoes
  • 1/2 can black beans
  • 1/4 cup tri color bell peppers, diced
  • 1 tablespoon onion, diced
  • 2 tablespoons shredded cheese
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/2 teaspoon sea salt

To make the salsa:

Method

  • Step 1

    Add ingredients to Vitamix or high powered blender and blend until to desired consistency. Adjust seasoning to taste.

To make the quesadillas:

  • Step 1

    Cook your seasoned beans and veggies on medium/low heat for about 10 minutes.

  • Step 2

    Add a tortilla to panini press or quesadilla make, add your cheese, beans, veggies and lime juice, cover with the second quesadilla and cook until slightly brown, about 5 minutes.

  • Step 3

    Pair with my home made salsa using Muir Glen Tomatoes.
