For the churros
Method
Step 1
Place the sifted flour in a large bowl.
Step 2
In a pot, bring the water, salt and olive oil to a boil. Remove from heat and pour over the sifted flour. Throughly mix everything with a wooden spoon for a couple of minutes until the water is incorporated. Cover with a cloth and rest for 15-20 minutes.
Step 3
Transfer the dough to a piping bag with a star tip, making sure there is no air inside the piping bag (bubbles can cause the churros to explode when you fry them).
Step 4
Heat oil in a large pot or dutch oven and carefully pipe the churros 4-5 inches in length directly into the hot oil, cutting with scissors to release from the piping bag. Fry until golden brown and crisp on all sides, flipping as necessary. Remove from oil and drain on a paper towel lined tray.
Step 5
Combine the sugar and cinnamon on a separate plate and coat the hot churros in the mixture. Set aside.
For the hot chocolate
Step 1
In a saucepan over low heat, heat the milk , orange peel and cinnamon stick. Allow to simmer gently over low heat for 20 minutes.
Step 2
Add the chopped dark chocolate and whisk until it melts. Serve hot with the churros and enjoy.
