"The typical American breakfast is usually eggs, bacon, toast, and coffee. Or it might be a big bowl of sugary cereal or three bacon maple bars. The same breakfast day after day after day. In Today’s Home Kitchen, we prefer The Scandinavian Breakfast of bread, meats, cheese, smoked fish, pickled herring and lots of fresh butter and lingonberry preserves."

ingredients
- 4 hard rolls
- 12 thin slices of smoked ham
- 12 thin slices of Havarti cheese
- 1 Jar pickled herring
- 1/2 cup softened butter
- ligonberry, cloudberry or gooseberry preserves
- fresh dill for garnish
Method
Step 1
We use our recipe for Dutch Caraway Hard Rolls, but use any hard roll you prefer. Dark rye, pumpernickel or European dark fruit breads are good choices. Wrap the rolls or bread in foil and warm in the oven.
Step 2
Start assembling the plates by folding the slices of ham and cheese and arranging them in a pattern. Add the smoked kippers and pickled herring to a small serving crocks. Add the softened butter and fruit preserves to small serving crocks. Garnish the plate with fresh dill sprigs.
Step 3
Cloudberry and Gooseberry preserves may be hard to find in stores, so just serve your favorite fruit preserves and jams.
