Roast Halibut with Chive Blossom Hollandaise
"Halibut is one of our favorites. Buttery, firm, clean and fresh, the flavor of halibut is a real treat. In this recipe we simply roast the halibut and serve it with a classic hollandaise."

ingredients

  • 4 6 ounce fillets fresh halibut
  • 1 tablepoons olive oil
  • 1/2 teaspoon each salt and pepper
  • Our recipe for Hollandaise

Method

  • Step 1

    Heat the oven to 425. Heat a non-stick skillet over medium heat. Season the halibut filets with salt and pepper. Pour the olive oil in the skillet, then add the halibut filets. Saute until the halibut is golden, about 2 minutes, then turn and saute the other side.

  • Step 2

    Place the skillet and halibut in the oven and roast until done, about 6 minutes or until a meat thermometer registers 135. Take the halibut out of the oven and put on a rack, cover with foil while you make the hollandaise.

  • Step 3

    While the halibut is resting, make our recipe for Hollandaise Sauce.

  • Step 4

    Place a halibut filet on a plate and drizzle with hollandaise sauce. Garnish with chive flowers.
