Mini Apple Rose Pies

First, mix 6 tbs of cold butter with 1/4c of sugar until creamy. Then, mix in 2 egg yolks. Lastly, add a 1 1/2c flour, 1 tb heavy cream and 1/4 tsp salt. When the dough comes together nicely, wrap and refrigerate for 2 hours. While waiting, cut apples in half and scoop out the seeds. Cut thin slices(shorter/horizontal) and submerge them in water with juice from 1/2 a lemon. Microwave apple slices for 3 minutes. Then, strain out lemon-water. Set oven to 375. Once the dough is ready, roll it out and cut into 2" strips. Spread any jam, cream cheese..anything! I used leftover cranberry sauce. Then, overlap apple slices like a spread out deck of cards on half. Once finished, fold over other half like a blanket? After it's been rolled, put each apple rose pie into a lightly greased muffin tin and bake for 45 minutes. I noticed that apple slices were getting too dark on some parts so check after 30 minutes and cover the top with foil to avoid that problem!
