Chocolate Covered Peanut Bars

INGREDIENTS
Cookie Layer (Dry):
1 cup of oat flour
1/3 cup of rolled oats
3/4 cup coconut sugar
1 cup peanut flour
1/4 tsp ground vanilla
1/4 tsp salt
1/2 tsp baking powder
Cookie Layer (Wet):
1 ripe banana, mashed
4-6 tbsp plant milk
1 tbsp coconut oil
2 tbsp peanut butter
Topping:
3 handfuls of peanuts, chopped
For Coating:
1 cup of dark chocolate
DIRECTIONS
Mix together dry ingredients. Blend the wet ingredients in a blender until smooth. Fold the wet thick cream into the dry ingredients and line a baking tray with parchment paper. Evenly distribute the batter on the tray and sprinkle with the chopped peanuts.
Bake at 350F for about half an hour. The bars are done when they've crisped up on the edges slightly. Carefully slice the cookie/cake layer into bars after about 20 minutes. Leave to cool.
Meanwhile melt chocolate over a water bath. Coat the bars individually, transfer back to the parchment paper and sprinkle a tiny bit of salt. Leave them to set.
