This seemingly fancy supper screams fall. The secret is that it's super easy to make; all you need is fresh persimmons, pork tenderloin, bitter radicchio, seasonings, and a hot grill pan.

ingredients

  • 2 Fuyu persimmons
  • 2 heads of radicchio
  • 1 pound pork tenderloin
  • 1 cup brown rice
  • 2 ounces blue cheese
  • Olive oil, to taste
  • Balsamic vinegar, to taste
  • Fresh basil, for garnish
  • Fresh thyme, for garnish
  • Kosher salt and freshly ground pepper, to taste

Method

  • Step 1

    Prep radicchio by slicing into wedges keeping the root end attached. Dress lightly with oil and salt. Season your pork tenderloin with oil and salt as well.

  • Step 2

    Grill radicchio and pork, radicchio will only take a few minutes on a very hot grill. You only want it to slightly char, not completely wilt. Cook your pork until it is cooked through.

  • Step 3

    To assemble salad: scatter your brown rice, then layer on your radicchio, pork, persimmons, blue cheese, and herbs, and then generously dress with olive oil and balsamic dressing. Season with salt and pepper to taste.
