Creamy Butternut Squash and Apple Soup

Make this for an easy, cozy dinner at home! TheModernProper used their new Vitamix Ascent Series blender to create this creamy butternut squash soup with a touch of sweetness from the roasted apples. Add some pepitas on top for texture and you will devour this soup!

  • 1 (2.5-3 lb) butternut squash, peeled, 1 ½ inch cubed
  • 1 small yellow onion, quartered
  • 2 sweet apples, (fuji, gala, honeycrisp), cored & sliced
  • 8 garlic cloves
  • 3 sprigs thyme
  • 1/4 cup olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper, freshly ground pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup cream or coconut cream
  • Pepitas (optional)


  • Step 1

    Heat oven to 400°F. Place the squash, onions, apples and garlic (cut side up) and sprigs of thyme on a rimmed baking sheet. Drizzle veggies with olive oil and season with salt and pepper . Roast 30-40 minutes until squash is fork tender.

  • Step 2

    Transfer all the roasted veggies to your Vitamix blender. Add salt, pepper, nutmeg, cayenne pepper and secure lid.

  • Step 3

    Select Variable 1. Turn machine on and slowly increase to the highest speed.

  • Step 4

    Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Serve immediately garnished with heavy cream or coconut cream for a vegan version and pepitas.
