ingredients
- 1 pound boneless chicken breast
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups any lettuce
- 2 hardboiled eggs, halved
- 1/2 cup cherry tomatoes, cut into quarters
- 1/2 ripe avocado, diced
Method
Step 1
Combine the Salt, Paprika Powder, Garlic and Onion Powder in a small bowl and season the chicken all over. Heat your grill pan on medium-medium/high heat and brush with oil. Once hot, add chicken and grill about 3-4 minutes per side or until chicken is cooked through. Transfer chicken to a cutting board to cool, slice and set aside.
Step 2
In a large serving bowl, layer the Lettuce first then top with the tomatoes, cucumber, avocado, sliced hardboiled eggs and then the sliced grilled chicken. Drizzle with dressing of choice or sprinkle with salt and pepper. Enjoy!
