Crispy and golden on the outside, and tender on the inside, these fries are tossed in a blend of olive oil, mixed herbs like basil and oregano, and minced garlic. Seasoned to perfection with salt and pepper, these flavorful fries are a delightful snack or side dish. For an extra burst of flavor, serve them with a creamy (vegan) tzatziki sauce, if desired.

ingredients

  • 10 small potatoes
  • 3 tablespoons olive oil
  • 3 tablespoons mixed chopped herbs, such as like basil and oregano
  • 2 cloves garlic, minced
  • Salt and pepper
  • (Vegan) tzatziki sauce, optional

Method

  • Step 1

    Preheat the oven to 400℉ and line a pan with parchment paper.

  • Step 2

    Slice each potato into 8 wedges and lay evenly on the prepared baking sheet.

  • Step 3

    In a small bowl, whisk together oil, garlic, herbs, salt and pepper. Drizzle this mixture over the potatoes. Toss the potatoes until well coated and spread into an even layer again.

  • Step 4

    Bake for 20-25 minutes or until crispy and golden. Serve with a sprinkle of herbs and tzatziki sauce.
