Belgian Blueberry Waffles

Blueberry Belgian Waffles
makes 6-8
Ingredients:
1 cup buckwheat flour
1 cup fine oats (gf, if required)
1 tbsp flax meal
1 tsp baking powder
1 tsp baking soda
1 pinch salt
1 pinch cinnamon
1 tsp bourbon vanilla powder
2 cups plant based milk
2 tsps apple cider vinegar
1-2 tbsp coconut sugar or maple syrup
1 tbsp coconut oil for baking
1 cup frozen blueberries
Method:
Mix dry and wet ingredients in separate bowls. Combine wet mixture into dry, then let sit to rest for 5minutes.
Heat your waffles iron and bake in batches according to manufacturer's directions. Before closing the iron, top batter with frozen blueberries.
Serve with maple syrup or powdered sugar.
