Recipe Adapated from Simply Organic

Crust:

1 1/2 cups all-purpose flour + extra for sprinkling surface

3 tablespoons organic cane sugar

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/4 cup cold water

1 egg

Splash of water

1 tablespoon turbinado sugar

Apple and Pecan Filling:

3 medium apples, peeled and diced

1/4 cup dark brown sugar

1 teaspoon Simply Organic’s Pure Vanilla Extract

1 tablespoons all-purpose flour

1 teaspoon Simply Organic’s Cinnamon

1/4 tsp Simply Organic’s Nutmeg

1/8 tsp Simply Organic’s Cloves

1/4 cup chopped pecans

Apple Roses

7-8 large red apples

1/2 cup fresh orange juice

1/2 cup sugar

1/2 cup unsalted butter

Directions

Crust

Preheat the oven to 425F.

In a large bowl, whisk together the flour, cane sugar, and salt. Add the cold, cubed butter. Use your fingers, or a pastry cutter, to crumble the butter into the flour mixture, until the mixture resembles tiny crumbs. Add the water and knead the ingredients together until it forms a ball.

Sprinkle a sheet of parchment paper with a small amount of extra flour. Roll out the crust to about 1/4 inch thickness. Press the crust into a tart pan with a removable bottom. Use a fork to prick the bottom of the tart shell to prevent the bottom from puffing up when baking.

Pre bake the crust for about 15 minutes. Remove from oven and allow to cool.

Apple and Pecan Filling:

In a saucepan over medium heat, combine the diced apples, brown sugar, and vanilla extract. Sprinkle the flour and spices over the apples, and stir to combine. Cook the mixture for a few minutes to reduce, until the apples are starting to get tender.

Remove the filling from the heat and allow to cool before pouring into the pre baked tart shell. Sprinkle with pecans.

Apple Roses

In a medium-sized pot set over low heat, combine orange juice, sugar, and butter. Heat until sugar is dissolved.

Slice apples with mandolin and place the sliced apples in the sugar, butter, and orange juice mixture. Leave apples to soak for 10 minutes until they are pliable.

To make your apple roses, start by using smaller apple slices first and roll the apple slice so that both ends of the slice overlaps a little to make the center of your apple rose. Next take  a slightly larger slice to build a second petal on the exterior of the first rolled slice. Continue with this technique until you have a apple rose. Place the completed apple rose starting around the far edge of your prepared tart. Adjust and fix the shape of the apple rose once it is placed if necessary.

Continue this process until the top of the tart is completely covered with apple roses.

Once your apple roses are complete, return the tart to the oven to bake for an additional 20 minutes or until the apple roses are golden.

Wait for the tart to cool (about 10 minutes) before slicing and serving.
