  • 1 cup salted butter, softened
  • 1 1/2 cups confectioners' sugar, plus more for topping
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups hazelnut or almond meal
  • 2 cups all-purpose flour
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 cup Nutella
  • Flaky sea salt, for topping (optional)

Method

  • Step 1

    Beat butter and sugar until light and fluffy in the bowl of a stand mixer fitted with the paddle attachment.

  • Step 2

    Add egg and vanilla, scraping the sides of the bowl as needed. Add flour, hazelnut or almond meal, nutmeg, and cinnamon and stir to until well combined.

  • Step 3

    Turn out dough onto a large piece of plastic wrap and wrap tightly. Refrigerate for at least 1 hour.

  • Step 4

    Preheat oven to 350F degrees. Line a baking sheet with parchment paper.

  • Step 5

    Cut chilled dough in half, return other half to fridge in the meantime. Roll out dough to ¼ inch thick, dusting with flour as needed to prevent sticking. Cut out circles using a 2-inch cookie cutter.

  • Step 6

    Roll out remaining chilled dough and cut out circles using a 2-inch cookie cutter. Cut and remove the centers using a small round cookie cutter (or piping tip). These will be the tops of the sandwich cookies. Note: you can save these cookie centers and bake them separately if desired.

  • Step 7

    Place cut-outs 2 inches apart onto prepared baking sheet and bake until lightly golden, about 10 minutes. Allow cookies to cool completely on baking sheet. Repeat with remaining cutout dough.

  • Step 8

    Once cooled, dust confectioners’ sugar on top of cut-out cookies (these will be with sandwich tops). Spread about 1 tablespoon Nutella on the bottom cookies (with no cut-out centers), then place the cut-out cookies on top to create a sandwich. Sprinkle with flaky sea salt, if desired.
