The only thing better than a giant board of snacks is a giant board of wholesome snacks! This plant-based grazing board has something for everyone, including marinated olives, fresh veggies, dried fruits, and a variety of plant-based cheeses. We love the idea of using a mix of store-bought and homemade components, so we whipped up a batch of savory coconut "bacon" and a smoky tomato spread that's perfect for dipping all of those Mary's Gone Crackers!

Recipe Card

For the coconut "bacon"

ingredients

  • 2 tablespoons tamari
  • 1 tablespoon maple syrup
  • 2 teaspoons smoked paprika
  • Cayenne pepper, to taste (optional)
  • 2 cups wide-sliced unsweetened coconut flakes,

For the Tomato Spread

ingredients

  • 2 cups cooked, drained white beans, such as cannellini or great northern beans
  • 1 clove garlic, peeled
  • 1 tablespoon red wine vinegar
  • 2 teaspoons smoked paprika, plus more for topping
  • 2 teaspoons tomato paste
  • 1/2 teaspoon cayenne pepper, optional
  • Sea salt, to taste
  • 1/4 cup olive oil, plus more for topping
  • Small cherry tomatoes, halved, for topping
  • Chopped sun-dried tomatoes, for topping

For the Board

ingredients

  • 1 (5.5oz) box Mary's Gone Crackers Super Seed Basil + Garlic Crackers
  • 1 (5.5oz) box Mary's Gone Crackers Real Thins Sea Salt Crackers
  • Assorted plant-based cheeses
  • 1 batch Coconut "Bacon", see recipe
  • 1 batch Tomato Spread, see recipe
  • Cherry tomatoes
  • Green beans or wax beans, ends trimmed
  • Marinated olives
  • Radishes, trimmed and halved
  • Petit carrots, halved lengthwise
  • Dried fruit, such as dates figs, or apricots
  • Grapes
  • Pickled veggies, such as peppers or cornichons
  • Nuts or seeds
  • Fresh herbs, for garnish
  • Edible flowers, for garnish

For the coconut "bacon"

Method

  • Step 1

    Preheat the oven to 350˚F and line a baking tray with parchment paper.

  • Step 2

    Whisk the tamari, maple syrup, smoked paprika and cayenne (if using) in a medium bowl, then add the coconut, tossing to coat.

  • Step 3

    Spread the coconut into an even layer on the baking sheet and bake for about 10-12 minutes, flipping the flakes halfway through baking, until golden brown. Let the coconut cool until crisp. Store any leftovers in an airtight container.

For the Tomato Spread

  • Step 1

    Blitz beans, garlic, vinegar, paprika, tomato paste, cayenne and a big pinch of salt in the bowl of a food processor. Process for a longer than you think, scraping the sides as needed, until very smooth. With the machine running, drizzle in olive oil. Taste and season with more salt, vinegar, chili and/or paprika, if needed.

  • Step 2

    Top with halved tomatoes, sun-dried tomatoes, a drizzle of oil, and a dusting of smoked paprika.

To assemble

  • Step 1

    Arrange the assorted Mary's Gone Crackers in piles or stacks on the board. Add small bowls of marinated olives, pickled veggies, and tomato spread. Fill up the board with a few piles of each of the other components and serve immediately.
