Pumpkin Pecan Chocolate Baked Brie
ingredients
- 1 small wheel of brie
- 1 1 1/2 pound pumpkin, hallowed out
- 1/3 cup whole pecans
- 2 tablespoons maple syrup
- 2 Chocolate Provisions by Scharffen Berger 82% Cacao Simply Dark Chocolate Flats
Grazing Board
ingredients
- Nut & seed crackers
- Pita crackers or sliced baguette
- Cranberry white Stilton cheese
- Creamy Toscano Syrah soaked cheese
- Golden berries
- Dates
- Blackberries
- Pomegranate Seeds
- 1 package Chocolate Provisions by Scharffen Berger 41% Cacao Milk Chocolate + Cacao Nibs Flats
- 1 package Chocolate Provisions by Scharffen Berger 70% Dark Chocolate + Toasted Coconut + Almond Flats
Method
Step 1
Preheat oven to 375°F.
Step 2
Slice the top of the pumpkin off to form a bowl. Make sure to remove seeds and hollow out the inside in order to fit the wheel of brie.
Step 3
Place the brie inside the pumpkin. Place the pumpkin on top of a baking sheet and bake for 30 minutes or until the cheese is gooey and the pumpkin is soft.
Step 4
Once the pumpkin and brie are baked, remove from the oven and allow to cool.
Step 5
While cooling, in a small saucepan over medium low heat, toast the pecans for about 5 minutes, then drizzle with maple syrup. Allow the syrup to warm up just enough to where it starts to slowly bubble, then remove from the heat and spoon over top the baked brie.
Step 6
Finish by grating the squares of Chocolate Provisions by Scharffen Berger 82% Cacao Simply Dark Chocolate Flats atop the pecans.
Step 7
To finish out the grazing board, set the pumpkin in the middle and fill out the surrounding space with cheeses, crackers, fruits and additional chocolate.
