How would I describe this sandwich? Think garlic bread meets chicken parm and they lived happily ever after. Frankly, I’m disappointed that I didn’t think of combining two of my favorite foods sooner! This makes for an awesome family dinner as we head into cooler months and is also the ultimate game day recipe! If you are short on time, use store-bought garlic bread or prepared chicken cutlets from your local butcher or prepared food counter. It will make getting this epic sandwich on the table that much easier! But the real star of this recipe is the Mezzetta Artisan Ingredients® Whole Garlic & Sweet Basil Marinara.

- 1 whole head garlic, sliced in half crosswise
- 1 tablespoon olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 1/2 cups seasoned Italian bread crumbs
- 1 cup finely grated Parmesan cheese, divided
- 3 eggs, beaten
- 1 pound chicken cutlets, patted dry
- Canola oil, as needed
- 4 tablespoons butter, softened
- 2 teaspoons dried parsley, or 2 tablespoons chopped fresh parsley
- 1 (1 pound) loaf soft baked Italian bread
- 1 cup Mezzetta Artisan Ingredients® Whole Garlic & Sweet Basil Marinara
- 1 (8 ounce) ball fresh mozzarella chees, torn by hand
- 1/2 cup drained and patted dry Mezzetta Bell Pepper Zesty Relish
- Fresh basil, as needed
Method
Step 1
Preheat the oven to 425˚F. Place halved garlic on a piece of aluminum foil and drizzle with olive oil and season with salt and pepper. Wrap the foil tightly around the garlic and roast for 35-40 minutes, or until the garlic cloves are very tender and spreadable.
Step 2
While the garlic roasts, make the chicken cutlets. Add the bread crumbs and ½ cup Parmesan cheese to a shallow bowl, mixing lightly to combine. To a second shallow bowl, add eggs and season and salt and pepper. Season the chicken cutlets with salt and pepper, then dip in egg wash, letting excess drip off. Once coated in egg, dip the cutlet in the bread crumb mixture, patting the chicken lightly to ensure the coating adheres. Repeat with all of the chicken.
Step 3
Once chicken has been breaded, place a sturdy cast iron or stainless steel deep-sided frying pan on the stove top. Add about ½ inch of canola oil to the pan and heat over medium-high heat. Once the oil is rippling, add chicken cutlets, working with about 3 at a time, and cook for 2-3 minutes per side or until golden brown and cooked through. Set aside on a paper towel lined tray and season with salt. Repeat with remaining chicken.
Step 4
Once garlic has roasted, squeeze the flesh into a medium bowl and mash into a smooth paste with the back of a fork. Add softened butter, parsley and remaining Parmesan cheese. Season with salt and pepper and stir to evenly combine.
Step 5
Line a baking sheet with aluminum foil and place the halved bread on top. Divide the garlic butter mixture evenly among each half of the bread, spreading evenly to coat the entire surface. Place in the oven and bake for 5-7 minutes, or until the topping is golden, but the bread remains soft. Remove from the oven and set aside.
Step 6
Set a baking rack on top of a rimmed baking sheet and place the cooked chicken cutlets on top. Divide the Mezzetta Artisan Ingredients® Whole Garlic & Sweet Basil Marinara among the chicken cutlets, then top with the torn mozzarella cheese, making sure the cheese is evenly distributed. Place in the oven to bake for 3-5 minutes, or until the cheese is just melted.
Step 7
To assemble, add the drained Mezzetta Bell Pepper Zesty Relish to the bottom half of the bread, then top with the chicken cutlets and fresh basil. Add the top half of the bread, then using a bread knife, cut the sandwich into 6-8 slices, depending on the exact length of your bread.
