Where There's Smoke, There's Flavor!

We had a blast this week at our Sizzling Summer BBQ with Pitmaster Rasheed Philips hosted by Beef. It's What's For Dinner. Pitmaster Rasheed was slinging cooking tips and smoky summer flavor with guests while they sipped on a craft cocktail named The Gold Rush- a shaken whiskey and lemon juice-spiked concoction served over ice to welcome the summer solstice!

Everything tastes better during Golden Hour

We hosted 50+ influential invitees to enjoy some drinks, laughs, and summery salad pairings for beef like a pesto-spiked potato and green bean salad, a peppery corn relish, and a refreshing watermelon and olive salad.

On The Menu
The menu included the pitmaster's play on a tostada: the star of the show was a succulent spice-rubbed Beef Tri-Tip smoked over hickory wood paired with a creamy avocado crema and sweet plantains cooked in some of the smoky rendered beef fat all atop a crisp plantain tostone. The result was the ultimate balance of flavors and textures- super crisp and ultra-creamy with juicy beef and sweet plantain to sink your teeth into.
Rasheed Philips is an Atlanta-based BBQ pit master (and soon-to-be cookbook author!) with a background in tech. He draws inspiration from his Jamaican roots in his cooking and has a line of his own signature spice blends (which are named for his love of Mob movies). Before basting his Tri-Tip in a rich jerk sauce infused with scotch bonnet peppers, scallions, and nutmeg, he seasoned the beef with his American Prime beef rub.
Some more of the evening's bites included Beef Brisket Pastrami Sliders topped with salsa verde and a perfectly cooked Beef Hanger Steak with cauliflower purée and anchovy butter.
