Hi! Did you miss me..? I certainly missed chatting to you guys! The onset of summer has been a whirlwind of events, and now I am gearing up in preparation for my beloved mother’s birthday. Being an only child of a single mother, celebrating her birthday each year was particularly important for me, because in my mind it was just us and I was the only one to make it extra special.
So, the planner that I am (ha!) when I saw Twospoons’ Chocolate Tarts with Coconut Yogurt and Figs, I had to make it for my mum, chocolate and coconut, honestly it’s a home-run in flavor combinations not to mention it takes longer to read this article than it does to make the whole tart. It’s the perfect entertaining recipe since the crust is gluten free as we’re using almond flour, and it’s also vegan since the filling uses luscious coconut yogurt and maple syrup as the sweetener. I jazzed up the filling with the zest of an orange to lighten up the richness of the yogurt and topped it off with sliced mango, which I highly recommend.
Frozen desserts, raw desserts, as well as simple salads and grilling dishes are the themes for my summer, because it’s all about enjoying the outdoors and reconnecting with family and friends. So get ready! This is just the first of many upcoming recipes I’ll be testing from our community that are 100% no fuss, so we can all get back to the lazy days of summer!
